I'm a fan of one pot meals, but I have collected a couple of side dishes over the years to help add to a plate of grilled chicken or to take to a family get-together.
When I was newly married, I had dreams of hosting great parties with appetizers and fancy dishes. Well, I married an introvert and the parties I host now tend to be with his seven siblings and all their kids or a book club where we take over the basement. I love appetizers that are great finger foods that are easy to snack on. I don't have caviar taste, so my appetizers are pretty simple.
My catch-all for those recipes that don't quite fit in another category.
My family loves a good potato salad, the recipe passed down from my papa, to my dad, to me. Add to that the secret of great cheesy potatoes and you have a tasty side dish.
Rice is a great side when we have had bread a few to many times in the week. I love putting a coupld of cups of rice in the instant pot with some water and spices/butter. Quick and easy side or base for under the casserole I made.
Salads without salad dressing are just pasta or veggies. This group has a mix of great salads and salad dressings.
My kids have usually been pretty good with veggies, but it is always nice to spice them up a little. One of their favorites is Oakey green beans, a recipe I learned from my cousin. I love traditional recipes that have family history involved, but also any way to make veggies taste better is a win.
